Mushroom Mutter Curry

Mushroom Matar in Marathi

Serves: 2 to 3 persons
Time: 30 to 35 minutes

12 to 15 Button Mushrooms (medium size)
1/2 to 3/4 cup Green peas
2 tbsp butter
1 tsp red chili powder
1/2 cup Onion paste
3/4 cup tomato puree
2 tsp ginger-garlic paste
Garam Masala - 2 cardamoms, 2 cloves, 1/2 inch cinnamon, 4 pepper corn
1/2 tsp Garam masala powder
2 to 3 tbsp cream or evaporated milk
Salt to taste

Method:
1) Heat a wok or a pan. Add garam masala Ingredients, except cardamom. Dry roast for a minute. Make a fine powder (I used mortar and pestle). Thinly slice the mushrooms.
2) Heat the pan. Add butter and let it melt. Add fine powder of Garam Masala and cardamom. Saute for few seconds and then add onion paste, ginger-garlic paste and red chili powder.
3) Saute the onion paste until color turns to golden brown. Add tomato puree. Cover and cook for couple of minutes. Now introduce green peas. Cover the pan and let it cook for 3 to 4 minutes over medium heat. Add little water if required. Also mix in the salt and readymade garam masala powder.
4) Once peas are cooked nicely, add sliced mushroom. Let the mushroom cook for couple of minutes. Turn off the heat and add cream. Stir nicely till the cream incorporates in the curry.
Serve this delectable curry with any Indian bread.

Mushrooms in Manchurian Sauce

Mushroom curry in Marathi

Time: 30 Minutes
Serves: 3 persons

For Mushroom Curry
12 no. Button mushrooms, sliced
2 tsp oil
1 Spring Onion, finely chopped (Reserve some greens for garnishing)
3 Garlic cloves, crushed
2 tsp Ginger paste
1 small green chili, slit
1 tsp Soy sauce (I used Ching's chili soy sauce)
1/4 tsp vinegar (if you want more sour taste add 1/4 tsp more)
1 and 1/2 cups Water or vegetable stock
2 tbsp corn starch or corn flour
Salt to taste
For Rice
1 cup Long grain rice (Basmati)
1/2 tsp Salt
2 allspice balls

Method:
Rice:
1) Wash rice under running water. Drain the water and keep the rice aside for 15 minutes.
2) In a cooking pot. heat 2 cups of water, add all spice balls and salt. Stir nicely.
3) Once water starts boiling, add washed rice and let it cook till rice is fluffy.
Mushroom curry
1) Heat oil in a nonstick pan. Saute ginger paste, green chili and garlic. Saute white part of spring onion for few second. Add soy sauce and 1 cup vegetable stock.
2) In a small bowl, mix 1 tbsp corn starch into 1/2 cup vegetable stock. Mix well and remove any lumps. Once the the vegetable stock starts boling, add this mixture to it and let it cook over medium heat. If you want to make the sauce more thick, add 1 tbsp corn starch to 1/4 cup water and add it to the sauce.
3) Add mushrooms and very little salt. Also add vinegar and let it cook for one or two minutes.

Fill a bowl with steamy rice and pour mushroom curry over it. Garnish with Green onions and serve hot.

Spicy Mushroom Masala curry

Serves: 2 persons

Mushroom Masala, Mushroom Curry, Indian spicy curry
Ingredients:
150 gram Button Mushroom
3 medium Onion, pureed
3 Juicy Tomato, finely chopped
6 to 7 Cashew nuts
4 to 5 Garlic Cloves, crushed
1 tsp Ginger Paste
2 tbsp Oil
1 tsp Cumin seeds
1 tbsp Cumin-Coriander Powder
1 tsp Garam masala
1/2 tsp Turmeric Powder
1 tsp Red Chili Powder
2 tbsp Cilantro, finely chopped
salt to taste

Method:
1) Wash Mushrooms thoroughly. If Mushrooms are big in size, cut them into two
2) Heat oil, add cumin seeds, turmeric powder and red chili powder. Add ginger-garlic paste. Add Onion, cashew nuts. Saute Onion till brown in color. Once onion is done, add tomatoes and cook till mushy. Add salt, coriander cumin powder and Garam Masala, mix.
3) Now add Mushrooms, cover and cook over medium low heat. Cook approx 20 to 25 minutes, till mushrooms cook.

Note:
If you want very fine gravy, then puree tomatoes into mixi and use it instead of chopping them. Make this gravy nice and thick.

Mushroom Kadhai

Mushroom Kadhai

Ingredients:
200 grams Mushroom
2 medium Onion (1 Chop finely, 1 make medium cubes)
1 small Bell pepper
2 medium Onion
2 tbsp Ginger-Garlic Paste
2 tsp Red chili Powder
1 tsp Coriander Powder
1 tsp Cumin Seeds Powder
1 tsp Garam Masala Powder
3-4 Tbsp Oil
Salt to taste
Black Pepper Powder
Cilantro for garnishing

Method:
1) Heat 3-4 tbsp oil in a wok, add 1 finely chopped onion and fry till it becomes translucent.
2) Once onion is done, add ginger garlic paste, red chili powder and sauté. Add chopped tomatoes. Let it cook on medium high heat.
3) Once tomatoes are tender add ½ cup water and stir.
4) Add Coriander Powder, Cumin Powder, Garam Masala Powder, 2 pinches Black pepper powder, salt to taste and stir well. Boil on medium heat. Turn off the heat after 3-4 minutes.
5) Make 4 equal pieces of each mushroom. Cut bell pepper and 1 onion into 1 inch cubes.
6) In other pan sauté mushroom pieces for ½ to 1 minute without using oil.
7) In a wok boil required gravy. Add onion, bell pepper pieces. Let it cook for 1 or 2 minutes. Add sautéed mushroom pieces. Add salt, coriander powder and cumin powder if needed. Garnish with cilantro and serve hot with roti, naan, or white rice.

Mushroom Soup

Mushroom Soup in Marathi

Servings: 1 big bowl

1/2 cup mushroom, chopped
3/4 cup sweet corn (boiled or mashed) or use canned cream style corn.
1/2 cup onion, chopped
1 green chili
Pepper to taste
1 bay leaf
1 all spice
1/4 tsp garlic powder
3 tbsp milk
1/2 cup water
1/2 tbsp butter
Salt to taste
Pepper to taste

Method:
1) Heat Butter on medium heat in a non stick pan. As butter melts, add all spice and bay leaf. Wait till you sense the flavor of all spice and bay leaf. Add onion.
2) Once onion is done, changes color, add mushrooms. Avoid over cooking of mushrooms. Add Sweet corn after approximately 2-3 minutes. Add 1/2 a cup of water to it. Bring it to boil. Remove all spice and bay leaf to avoid excessive spicing of the soup.
3) Add Salt and Garlic powder. After everything is mixed well, on medium heat, add milk. After a minute, add finely cut green chili.
4) Adjust salt and pepper to taste while serving.
