Phodani Bhat
Makeover of Leftover rice.
Ingredients:
2 cups left over cooked rice
1/3 cup small slices of Carrot
1/2 cup green peas
1 small bell pepper thinly sliced lengthwise
1/4 cup sliced French beans
3-4 Dry Red Chilies
3-4 tbsp vegetable Oil
1/2 tsp Asafoetida
1 tsp Cumin seeds
4-5 curry leaves
2 tbsp lime juice
1/4 cup finely chopped cilantro
Salt to taste
Method:
1) Separate cooked rice grains gently.
2) Heat 3-4 tbsp oil in a frying pan. Temper with asafoetida, cumin seeds, curry leaves and dried red chilies. De seed chilies before use, if you want to take out the heat from the dish.
3) Reduce heat on medium. Add sliced French beans and peas. Cover with lid and Cook it for 2 minutes. Then add bell pepper, carrot slices and sauté. Cover with lid and let it cook for 1-2 minutes. Don’t overcook these vegetables as we need them half cooked. Add some salt while cooking the vegetables.
4) Finally add rice and sauté. Cover the pan for couple of minutes. We have already added salt while cooking vegetables so add salt accordingly. Add lime juice and mix well. Fry for 1 minute. Garnish with cilantro and then serve hot.
